Delta has dropped the price of their flights from Winnipeg to Quito, Ecuador down to $501 CAD roundtrip including taxes.
The flights have 2 stops each way, but with a total travel time of under 15 hours each way, they're actually pretty decent travel durations, for Ecuador.
There are also flights from Winnipeg to Santiago, Chile (SCL) for $770 CAD roundtrip.

How to find and book this deal
1. Start with a Google Flights search like this one:

Google Flights: Winnipeg to Santiago, Chile
2. Click on the departure date box to open up the calendar view and look for the cheap date combinations.
3. Select your flights and click through to the Delta website.

Update 10/10 - Flights from Winnipeg to Quito, Ecuador have returned today for $511 CAD roundtrip including taxes. There are dates available in January and February 2018.
There are very few dates with just 2 stops each way (Jan 24 to Feb 8 is the only one I've seen).
There are more dates available with 2 stops on the way down, and 3 on the way home.

3. Some of these don't seem to be bookable from Google Flights, but try going to Kayak.
Search for a flight from Winnipeg to Quito, Ecuador (UIO)
Use the same dates you found on Google Flights.
Click through from Kayak to the Delta website.
